Most conversations about a home addition start with the room. How big, where it goes, what it will be used for. The foundation comes up late, usually as a line on an estimate.

Piers. Individual footings carrying posts or a beam rather than a continuous wall. Piers suit additions where a continuous foundation is unnecessary or impractical, and they use less concrete. They still have to reach below the frost line, and they need engineering attention on load paths since the weight concentrates at points rather than spreading along a wall.
Frost depth is the Rochester variable

The hard part is joining new to old
An addition foundation is not a standalone foundation. It has to meet one that has already been in the ground for decades and has finished doing most of its settling.
New concrete settles. Old concrete has largely stopped. If the two are tied rigidly together without accounting for that difference, the joint is where it shows up, as a crack running up the wall from the seam, a door that stops latching, or a visible line where the addition meets the house. This is called differential settlement and it is the most common way an otherwise well built addition announces itself as an addition.
Managing it comes down to unglamorous things done correctly. Matching the bearing depth so both foundations sit on comparable soil. Compacting backfill properly rather than dumping it back in. Choosing deliberately whether to tie the foundations together with dowels or to isolate them with a control joint, based on the soil and the loads rather than on habit. Getting drainage right so water is not being directed into the new joint.
None of it is visible once the addition is finished, which is exactly why it is worth asking about before it is buried.

Most home additions do not stall during framing. They stall before it, waiting on the foundation.
Framing cannot start until the footing is poured, inspected, and cured. A general contractor who subcontracts concrete is dependent on someone else for the one phase everything after it waits on.
